Chicken Broccoli (Cauli rice) Divan

10 plated 3Recently, I’ve been loving the idea of taking recipes that are already healthy (and that my family loves) and trying to use less carbs while incorporating more (hidden) veggies.

We LOVE casseroles. My boys like them because they’re delicious; I like them because they are SIMPLE and can be prepped ahead of time and frozen for those busy weeknights.

Chicken Broccoli Divan is a recipe I developed before I was even married. I cleaned it up a bit by using homemade broccoli cheese soup and brown rice. My boys love it but I wanted to try to sneak in more veggies.

10 plated 2I decided to replace the brown rice with cauliflower rice. You make make your own cauliflower rice, or you can purchase it at most grocery stores in the produce section or even in the freezer section. Not only did my boys not seem to mind, they also seemed to enjoy this recipe better. Using cauliflower rice adds more moisture to the recipe so it tends to not dry out during baking.

I always make this recipe in 2 dishes and freeze one for future use. One mess, two meals, half the time!! LOVE IT!!

Chicken Broccoli Divan

Servings: 8
Portion Fix Container Count (per serving): 2 Green, 1 Red, 1 Blue

Ingredients

2 package frozen broccoli, steamed
3 cups broccoli cheese soup (click here for recipe) or 2 cans broccoli cheese soup
2 heads of cauliflower, riced. (or you can purchase riced cauliflower)
1 cup shredded cheddar cheese
6 chicken breasts, cooked and cut into bite size pieces or shredded

Directions

  1. Preheat oven to 425*. Spray dish (1-9×13 dish or 2 smaller ones) with non-stick cooking spray.
  2. Cut cauliflower into florets. Rice cauliflower and bake at 425* for 25 minutes.

  3. Place broccoli cheese soup in large mixing bowl. Add prepared cauliflower rice and mix well.
  4.  Shred or cut cooked chicken breasts.
  5. Add steamed broccoli and chicken to bowl. Mix well.5 add chik and brocc
  6. In prepared dish, evenly divide mixture.6 mixed in pan
  7. Top with shredded cheese.
  8. Bake at 425 for 20 minutes covered, then 5 minutes uncovered.
