Eggplant Fries

7 plated 2We LOVE french fries! But since they seem to settle on my hips and thighs, I have been looking for alternatives to the traditional crispy temptations that also provide more nutrients and sneak in more veggies for my family’s diet.

I’ve previously mentioned our love of sweet potato wedges and our new found turnip fries. So when I underestimated how much eggplant my garden would produce, I decided to turn an eggplant into fries…and it worked!! While this is not my variety fry alternative, it 7 plated 5certainly does fit the bill.

This recipe can use as many or as few spices as you prefer. It goes great with hamburgers, on a salad, or simply as a side dish.

Note: This recipe uses foods from the Portion Fix food lists, so it would be “portion fix approved”. However, I do not have the science to defend the container counts. I simply measured using the containers and made my best estimate. This is NOT a Fixate recipe. It does, however fit the 2B Mindset plate-it method.

Eggplant Fries

Servings: 2
Servings Size: ½ eggplant
Portion Fix Container Count (estimated): 1 Green (per serving)

Ingredients:
– 1 medium eggplant
– sea salt
– ground black pepper
– Non-stick spray

Directions:

  1. Preheat oven to 425*. Line cookie sheet with parchment paper or foil with cooling rack on top. Spray paper or rack.

  2. Cut eggplant into slices about ½ inch thick.

  3. Cut slices into strips, about ¼ inch thick.

  4. Place strips onto sprayed pan/rack.

  5. Spray fries with non-stick spray and season with sea salt and pepper.

  6. Bake for 30 minutes or until browned and crispy.

  7. Serve hot and enjoy!
