Super Clean Banana Muffins

11 title 1I’ve recently discovered that I enjoy trying new things…reading new books, learning new concepts, trying new activities, and experimenting with new ingredients when cooking.10 plated 2

My son wanted some banana muffins the other day but I didn’t have all of the ingredients needed for my usual “go-to” recipe. In fact, the only ingredients I DID have on hand were bananas and whole wheat flour. I had no sugar, no oil/butter, and no eggs. So I used Google and Pinterest found that if I swapped out some “normal” ingredients, I could attempt to make the coveted banana muffins.

10 plated 4Much to my delighted surprise, they actually turned out well!  My son and husband LOVED them!  I even took some to church and they were devoured along with tons of compliments and recipe requests. When I said that I used yogurt, applesauce, and flaxseed with my whole wheat flour, most people went bug-eyed and their jaws dropped.

While I will most likely stick to my “normal” clean recipe for banana muffins, this one certainly works in a pinch!  I hope you enjoy!

(Super Clean) Chocolate Chip Banana Muffins

Ingredients:
– 2 ½ cups whole wheat flour
– 1 ½ teaspoons baking soda
– 1 teaspoon baking powder
– ½ teaspoon salt
– ¾ cup yogurt
– 1 ½ cup applesauce (or 1 cup honey)
– 2 Tablespoons of flax seed mixed with 6 Tablespoons water
– 3 cups ripe bananas (about 7 medium), mashed
– 1 teaspoon vanilla extract
– ½ cup chocolate chips

Directions:
1. Preheat oven to 325 degrees. Line muffin tins with foil muffin cups.
2. In a medium bowl, combine flour, soda, powder, and salt with a wire whisk; set aside.

 


3. In a large bowl, cream yogurt and applesauce.

 


4. Mash bananas.

5. Mix flaxseed and water.

6. Add flaxseed, bananas, and vanilla to large bowl (with yogurt/applesauce mixture) and beat at medium speed until thick. Scrape down sides of bowl.

 


7. Add the flour mixture to the wet mixture, then blend at low speed just until combined. Do not overmix.

 


8. Add chocolate chips and fold them in or add them on top after you’ve divided into tins.

9. Pour batter into prepared pan(s). Bake on center rack of oven for 30-45 minutes. A toothpick inserted in center should come out clean, and the muffins should pull away from the sides.

 


10. Place on cooling rack to cool completely.

A fun, clean, traditional recipe for Banana Bread/Muffins that contains no eggs, no oil, and no refined sugar.
