(Spaghetti Squash) Baked Ziti

Baked Ziti had been one of my MAIN casseroles in our monthly rotation. When I started eating cleaner, I simply changed to whole wheat pasta. But when I realized I needed to incorporate more veggies into my family’s diet, I decided to switch out the pasta with spaghetti squash.

I’ll admit, I was a bit nervous that my boys would like it and wouldn’t eat it. But honestly, they didn’t even notice!  Because I used spaghetti squash, I noticed that the dish was moister and had more flavor than when I had used pasta. It was sweeter and seemed to melt in my mouth. So yummy!

(Spaghetti Squash) Baked Ziti

Servings: 4-6
Portion Fix Container Count: 1 green, 1/2 purple, 1 red, 1 blue

Ingredients

  • 1 jar marinara sauce
  • 1 medium onion, diced
  • 1 pound ground turkey
  • 1 large spaghetti squash or two small
  • 1 cup mozzarella cheese, divided
  • parmesan cheese to taste
  • 1 tsp basil
  • 1 tsp oregano
    1 ingredients

Directions

  1. Prepare the spaghetti squash.
    1. Cut in half long ways (like a hot dog!) and hollow out the inside.
    2. Place face down in a baking dish.
    3. Add water to the pan, just enough to fill the bottom.
    4. Bake at 350 degrees for 45 minutes, or until a fork goes easily through the outside.
    5. Remove spaghetti squash from oven. Hollow out the inside and squeeze out excess water
  2. In a large skillet, heat olive oil over medium heat. Add onions, basil and oregano. Cook onions until translucent.
  3. Add turkey sausage to onions in skillet and brown. Drain off any excess grease.
  4. Add jar of marinara sauce and let simmer on stove.
  5. Combine spaghetti squash with sauce.
  6. Scoop half of the mixture into a baking dish.
    10 bottom layer
  7. Sprinkle ½ cup mozzarella and sprinkle with parmesan.
    11 2nd layer
  8. Scoop the remaining spaghetti squash and sauce on top.
    12 3rd layer
  9. Top with remaining cheese.
    13 top layer
  10. Bake at 350 degrees for an additional 25-30 minutes.
