Crockpot Rotisserie Chicken

My crockpot is one of my best friends. I use it regularly, I am sure it talk to it nicely, and I try to treat it well. In return, it gives me some of the most delicious, nutritious meals with little effort on my part.

I love rotisserie chicken. It’s so convenient, provides lots of meat, and is EASY. But I didn’t like the fact that I had no idea what ingredients were used to flavor the chicken, nor did I truly know how it was prepared or how long it sat under a warmer at the grocery store.

When I make this recipe, I use two crockpots and buy the double pack of chicken. It takes the same amount of time to prepare but I get double the meat with half the effort and clean up. This recipe is a MUST when having company over when you don’t want to cook all day but also want yummy leftovers.

It’s simple, CLEAN, delicious, and nutritious!  Easy to make, easy to clean up, easy to DEVOUR!!!

Crockpot Rotisserie Chicken

Portion Fix Container Count: 1 Red

INGREDIENTS

  • 1 whole chicken (the best is organic and brined)
  • 2 tablespoons paprika
  • 2 teaspoon (or less) salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ¼ teaspoon (or less) of cayenne pepper
  • aluminum foil

INSTRUCTIONS

  1. Create 4 balls from aluminum foil and place in the bottom of a lined crock pot.

  2. Mix all spices in a bowl.

  3. Rinse and pat the chicken dry. (Sorry no picture…my hands were gross)
  4. Rub the spice mix all over the chicken, inside and out, and if you can under the skin too. (Again, no pic due to gross hands, but I think you can figure it out)
  5. Place the chicken on top of the aluminum balls.

  6. Cover and set it up on low for 6-8 hours, or on high for 4-5 hours…or until the chicken is cooked through and the internal temperature reaches 165 F (use a meat thermometer).

  7. Remove the chicken carefully, carve and serve.
