Zucchini Cobbler

I have 2 questions for you: Do you like apple pie? Do you have a lot of extra zucchini laying around?

Well, if you answered YES to one or both of these questions, I have the solution to your problem!!

This recipe is for zucchini cobbler, but most people will think you’ve made apple cobbler or apple pie. This is a great way to hide some veggies in a dessert!!!

My family loves it!  In fact, this is a commonly asked for birthday dessert. Try it out and modify it to fit your family’s taste!

TIP: You can peel and cut zucchini ahead of time and freeze it in bags. When you want it, just thaw it and be sure to SAVE THE LIQUID!

Zucchini Cobbler

Ingredients:
4 C chopped zucchini
¼ C lemon juice
1/3 C sugar
1 tbsp cinnamon
1 pie shell, optional
Topping: oatmeal, whole wheat flour, brown sugar, melted butter, cinnamon

 

Directions:
1. Cook zucchini and lemon juice over medium heat until tender, about 15-20 minutes.

2. Stir in sugar and cinnamon, cook 2 more minutes.

 


3. Grease pie plate/dish. Put in pie shell**This is optional.** Add zucchini mixture.

4. Top with cobbler topping.

 


5. Bake at 375 for 35-40 minutes. Serve warm.
